The Magic Flute: Sparkling Wines by the Glass
You don't have to buy a whole bottle of bubbly to indulge in the holiday spirit this year. Just select a sommelier favorite at these hot spots that serve sparkling wine by the glass. For more than a decade, the Bubble Lounge has been the Manhattan hub of all things champagne—but this year, wine director and managing partner Emmanuelle Chiche-Wellford (who has poured fizz for Scarlett Johansson and Mos Def) introduced something new: "grower" champagnes created by farmers who harvest their own grapes.
To try out the trend, Emmanuelle suggests a flute of Fleury Brut, "the first biodynamic champagne from the south of Champagne or Vallée de la Seine." The glass comes on its own or as part of the Farmers Fizz Flight, a tasting of three grower champagnes ($40). "With this drink, you taste the raw grapes," Emmanuelle says. "Most champagne is really a blend of different grapes, so this is a true novelty." Bonus: By helping out small purveyors, you can truly practice goodwill toward men this season.
